San Pellegrino says that the London outpost of Zuma is the 66th best restaurant in the world.  Since I don’t sell sparkling water for a living, I’m in no position to judge whether that is true.  Nor have I traveled the world (I tend to stay within Miami’s urban development boundary).  So I’ll take San Pellegrino at their word and stick to what I pretend to know: Miami restaurants.  And after a visit to Zuma on opening night, I think it’s safe to say that this place will develop a following (perhaps some of the Sugarcane groupies will discovery that it shares DNA with that new midtown favorite).  Just as Il Gabbiano defied conventional wisdom by drawing people to downtown Miami for dinner, Zuma will become a destination in its own right.  A more prosaic review will have to wait and probably is only appropriate after several visits (which will be forthcoming if tonight was any indication).  But I’d say the standout dishes were the scallop tartar with American Hackleback caviar, the spicy yellowtail roll, and the grilled pork belly skewers with yuzu and miso.    A bit overstaffed while the London folks are visiting for the opening.  But once they get sent back to Wee Britain it should be in great shape, perhaps even the 66th best place in the entire world.

Oh, and if you’re looking for a job, it appears they’re hiring a sous chef.
